Today, I’m thankful for this English Toffee recipe. I got an email late
yesterday afternoon saying that I needed to bring something to a get-together
for tonight. I didn’t have time to go to the store, but I always try to keep
the ingredients for English Toffee in my pantry.
My mom got this recipe at some point when I was younger. When I moved
out on my own, she passed it along to me. It takes 4 ingredients and goes
together in about 10 minutes. And everyone loves it!
(I tend to cut the recipe in half if I’m making some for a smaller
crowd.)
Ingredients:
1 box of unsalted saltine crackers (green label)
1 package of Nestle semi-sweet morsels
2 sticks of butter
1 cup of sugar
Handful of chopped walnut (optional)
Preheat oven to 350 degrees.
Line 2 cookie sheets with tinfoil for easy cleanup.
Line saltines up edge to edge to fill cookie sheets.
Melt butter in microwave.
Pour butter into saucepan.
Pour sugar slowly into melted butter, stirring continuously.
Continue to stir as mixture comes to a boil for 3 minutes (do not let
mixture burn).
Drip mixture over saltines, then use pastry brush or the back of a
spoon to be sure each of the saltines are completely covered. You have to work
quickly before the butter carmelizes.
Place cookie sheets in the oven for EXACTLY 5 minutes. Since each oven
is different, do check so they don’t burn.
Place both cookie sheets on top of stove.
Drop ½ bag of Nestle morsels scattered over top of hot saltines.
Wait until morsels melt and frost saltines with back of spoon until all
crackers are covered.
Put the cookie sheets in the fridge until cold.
Cut with a cleaver along the lines of the crackers.
Oh that's just evil...cause you know I need another fattening recipe.
